Roasted Apples

This isn't a recipe so much as a side note in her classic vegetarian cookbook. Didi writes of her experience dining on whole roasted apples in Paris. These apples are delicious alongside a dish of grains and seared leafy greens.

(Serves 2)

Ingredients:

  • 2 small tart, firm apples

  • 2 Tbs honey

  • 1 tsp Dijon mustard

  • 3 Tbs water

Directions:

  1. Prehat the oven to 400°F.

  2. Place whole apples in a small baking dish.

  3. Mix honey, Dijon mustard and water together. Pour this over the apples.

  4. Roast the apples for 30 minutes, basting once or twice with the juices.
