Roasted Fennel with Green (or Red) Apples

Not sure why the recipe called for a green apple. Red ones shine in this dish as well. Just choose a firm apple so it doesn’t turn to mush while the fennel bakes, or give the fennel a head start and add it after 15 minutes.

Ingredients:

  • 1 large or 2 small fennel bulbs (1.5 lbs)

  • 1 medium onion – sliced thin

  • 1 large apple – cored and sliced thin

  • salt and pepper to taste

  • 2.5 Tbs olive oil

Directions:

  1. Preheat oven to 400 degrees.

  2. Remove the outer layers of the fennel bulb, and discard. Slice the bulb in half or quarters if it is large. Cut cross-wise into ¼-inch slices.

  3. Add the sliced fennel, onion and apple to a baking tray with sides or a casserole or baking dish. Add the salt, pepper and olive oil, and toss the ingredients together.

  4. Roast in the oven for 20-25 minutes until the fennel is tender. Stir after 15 minutes.

  5. Serve right away.
